Friendship Dairies originated over 95 years ago in the small town of Friendship, located in upstate NY, where its founder first crafted an old world-style cheese called farmer cheese. In Poland, this type of cheese is known as White Cheese, Twarog or Bialy Ser and is commonly used as a filling for blintzes. In its early days of production, this all-natural cheese was produced all week long then transported by railway to be sold on the streets of New York City.
Today the hands-on approach and old-world flavor are the same. Friendship farmer cheese is made by pressing the curd until almost all of the liquid is eliminated. It has a mild taste and moist texture, and yet is dry enough to be sliced. And if you have an aversion to lactose, it only has 0.5% per serving, so it’s a nice way to enjoy dairy when you’re on a restricted diet. All-natural and low in fat, it makes a great substitute for ricotta cheese, or try it in blintzes and salads.

This farmer cheese is essentially cottage cheese that has been pressed to remove water. It has a firmer texture than cottage cheese because of the lower moisture content and is cut into curds, drained, and pressed, creating a drier texture. The consistency is a drier, denser form of cottage cheese with a distinctive, tangy flavor that adds richness to all of your favorite dishes.
